Guilt free GF, DF, carrot cake loaf


Sugar is the ultimate killer which leads to inflammation. I ran into an amazing recipe which I will link below. It ultimately had gluten…this messes with my tummy! HOWEVER, I will give you my substitutions. I put a bit less sugar (and I replaced sugar with honey as the sweetener) . Everything in caps is my replaced ingredient

Ingredients
Vegan Carrot Cake Loaf:
150 g (¾ cup + 1 Tbsp) COCONUT BROWN SUGAR (has less the sugar content)
65 g (3 TBSP of HONEY)
120 ml (½ cup) OLIVE OIL (or coconut)
120 ml (½ cup) unsweetened non-dairy milk (I used oat)
2 tsp APPLE CIDER VINEGAR
1 tsp vanilla extract
finely grated zest of 1 lemon or orange OR LIME
140 g (1 cup + 2 Tbsp) plain (all-purpose GF) flour
65 g (½ cup + 1 Tbsp) COCONUT FLOUR
2 tsp baking powder
½ tsp bicarbonate of soda (baking soda)
1 ½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp salt
240 g (8.5 oz)(1.1 cups) grated carrot
